The work week is already busy enough without having to worry what to have for dinner. Often times you might find yourself scrambling to put something together in the evening, after a long day of working and commuting. Here’s my go to recipe during busy times because you can prep the chicken the night before and there is minimal cleanup after cooking. I typically just set the timer on the stove, and come back to a hearty and comforting meal!
Total Time: 1hr 45 minutes
Ingredients:
4 chicken thighs
2 tbsp. fresh thyme
5 garlic cloves, peeled and roughly chopped
2 tsp. garlic powder
1.5 tsp. sugar
3 tbsp. extra virgin olive oil
salt and pepper to taste
Instructions:
1) Wash chicken thighs and pat dry.
2) Prepare marinade by mixing thyme, garlic powder, sugar, and olive oil in a bowl. Add to chicken thighs.
3) Add salt, pepper, and chopped garlic to chicken. Set aside in refrigerator and marinate for at least 1 hour.
4) After marinating, arrange chicken on a baking tray lined with aluminum foil. Bake at 365F for 45 minutes or until the chicken is thoroughly cooked.
Tips:
You can prepare this recipe beforehand by marinating the chicken overnight and baking the next day. Want the final product to look a little more gourmet? Just add 2 sprigs of thyme to the plating!
