Red potatoes (also known as new potatoes) have a smooth, creamy texture when cooked. They have an ability to absorb accompanying flavors well, which is why red potatoes are absolutely delicious when paired with savory bacon and fragrant thyme!
Total Time: 20 minutes
Ingredients:
2 red potatoes, diced 1″ chunks
2 slices of nitrate-free bacon, cut into 1.5″ pieces
1 sprig of thyme
salt and pepper to taste
Instructions:
1) Wash potatoes by gently scrubbing the skin under cold running water. Leave skin in place
2) Heat pan over medium flame. Add bacon and render fat.
3) Place potato chunks into the pan and add the thyme leaves. (Note: The tiny thyme leaves are easily removed from the stems by pulling the stems through your fingers from top to bottom, against the direction of the stems.)
4) Cook the potato until softened and a golden brown edge starts to develop, approximately 15 minutes. Season with salt and pepper to taste.
