Spinach is a nutrient powerhouse that is low in calories and high in vitamins, such as vitamin A and vitamin K. Spinach is best available during winter months. When visiting the food market, buy fresh leaves that have a dark-green color and crispness. Avoid the bunches that have dull/limp leaves, yellow discoloration, or holes.

Ingredients:
1 bunch of spinach
olive oil, drizzle
salt and pepper to taste
wedge of Lemon
Instructions:
1)Wash and soak spinach in cold water for about 5 minutes.
2) Boil water in a pot and add spinach leaves. Keep a close eye on the spinach and remove immediately once it wilts (approximately 1-2 minutes).
3) Submerge spinach in bowl of ice cold water to stop the cooking. Drain completely.
4) Season spinach with salt and pepper to taste and a drizzle of olive oil on the top. Serve with a wedge of lemon on the side.
